Cada día los hoteles en Cancún se vuelven más autosostenibles. Desde hace años, muchos han operado con sus propias plantas desaladoras. El siguiente paso son los sistemas propios de producción de alimentos.
Datos oficiales sostienen que 98% de los alimentos provienen del centro del país o vía marítima, lo que representa un fuerte impacto ambiental, social y un enorme costo logístico para las empresas
La nueva apuesta de los centros de hospedaje para hacer frente a este problema son las granjas sustentables.
“Son sistemas diseñados para tener una gran diversidad de productos. Son estéticos para que funcione como atractivo en hoteles, restaurantes o un “farm to table”. Produce tres mil 600 kilos al año y 25 mil piezas de plantas”, ha afirmado en Cancún, Roberto Alcérreca, representante de negocios de la empresa Bofish.
La compañía ha sido el principal impulsor de estos sistemas en Quintana Roo. Sus representantes han sostenido que se pueden obtener ahorros de hasta 20% en las compras de insumos de productos de campo. En vez de traerlos de otras partes del país o el mundo serían cosechadas en el patio de los hoteles.
El planteamiento de este tipo de proyecto no es nuevo, ha sido de años atrás. De hecho los permisos llegaron hace tres años, pero la pandemia llegó y se tuvo que detener los trabajos. Ahora la empresa ha concretado los primeros acuerdos con las cadenas hoteleras.
La propuesta representa ahorro frente a la agricultura tradicional, además requiere 90% menos de agua, 50% menos de energía y materia prima, ha señalado por su parte Carlos León, presidente de Bofish.
Se trata de un sistema integral que combina la producción acuícola y hortícola en un sistema integrado donde el agua y los desechos de los peces son reciclados por medio de microrganismos y plantas.
